Baked doughnuts (with dulce de leche frosting)

While browsing a cooking stuff shop (I could spend hours in there), I bought a doughnut baking pan. That was just the right thing! Jé immediately took to it, as have I. You might want to try the following recipe (adapted from Joy the Baker [1,2], who in turn adapted it from somewhere else…)

Doughnuts (makes 6 baked doughnuts) (adapted from Joy the Baker)

  • 1 cup all-purpose flour
  • 3/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • a pinch of salt
  • 1/2 teaspoon freshly grated nutmeg
  • 1/3 cup sugar
  • 2 tablespoons unsalted butter
  • 1 egg
  • 1/2 cup buttermilk
  • 1 teaspoon pure vanilla extract or vanilla sugar (the German way…)

Heat oven to 350 degrees F/180 C.  Grease a doughnut pan.

Combine flour, baking powder, baking soda, salt, nutmeg, and sugar.

Melt butter until it begins to brown.  Transfer to a small bowl.

In a separate bowl, whisk together egg, buttermilk, and vanilla. Add brown butter, and whisk.

Dump the wet ingredients all at once to the dry ingredients.  Stir together with a wooden spoon until  well combined.

Distribute the batter across the doughnut pan. Bake in oven for about 8 minutes. Remove and let cool.

Dulce de Leche Buttercream Frosting

  • 3/4 cups unsalted butter, softened
  • 1.5 Tablespoons heavy cream
  • 0.5 teaspoon vanilla
  • 2 cups powdered sugar
  • pinch of salt
  • 3/8 cup dulce de leche
Combine butter and powdered sugar on low using an electric mixer.  Add cream and vanilla and beat on medium speed until smooth and no lumps appear.  Scrape down the sides of the bowl (lick the spatula).  Add the prepared dulce de leche and beat to incorporate.  Spread on cooled doughnuts. Eat the rest on ice cream….
