Corn salsa


  • about 1/2 cup or so frozen corn
  • 1 red pepper (or orange, but not yellow!), diced
  • 1 (red) onion, diced
  • 1 tbsp chopped cilantro
  • 1 handful of halved grapes
  • 1 tbsp lime juice
  • 1 tbsp olive oil
  • 1 tsp Szechuan pepper oil mixture (very spicy)
  • or: 1/2 tsp crushed red pepper
  • 1 tbsp maple syrup
  • and of course, salt and pepper to taste

Mix all the ingredients together, let sit for 1 hour for all the ingredients to blend their flavors. Over meat, or just on the side.
