Spicy Mango sauce

(variation on a theme)

  • 1 tablespoon olive oil
  • 1/4 red onion, diced
  • some jalapeño or other spicy stuff, finely diced
  • 1 mango, ripe, shredded (food processor or very finely diced)
  • some maple syrup for sweetness
  • 4 tablespoons rice or cider vinegar
  • (optional) some fish sauce (instead of salt)

Heat in small pot, sauté the onions. Add the rest, simmer (10-15 minutes). Strain.

Drizzle over scallops or serve as dipping sauce with fish.
