Corn salsa
Ingredients:
- about 1/2 cup or so frozen corn
- 1 red pepper (or orange, but not yellow!), diced
- 1 (red) onion, diced
- 1 tbsp chopped cilantro
- 1 handful of halved grapes
- 1 tbsp lime juice
- 1 tbsp olive oil
- 1 tsp Szechuan pepper oil mixture (very spicy)
- or: 1/2 tsp crushed red pepper
- 1 tbsp maple syrup
- and of course, salt and pepper to taste
Mix all the ingredients together, let sit for 1 hour for all the ingredients to blend their flavors. Over meat, or just on the side.
