Pomegranate-Onion-Olive-Raisin sauce and filet
Ingredients: (à peu près….)
- pomegranate seeds (1/2 cup?)
- 1 sweet onion, chopped
- some raisins (1/2 cup?)
- some olives (1/4 cup?), chopped (most of them anyway)
- red wine
- pomegranate syrup
- stock (chicken, beef, whatever)
Fry onions in olive oil (10 minutes, low flame). Deglaze with red wine. Add olives, raisins, pomegranates, some pomegranate syrup, some stock, reduce. Should be moist, but not liquid. The raisins will also soak up liquid. Finish with some pink pepper.
Serve over rare filet, with side salad.
No pictures. We ate it all before deciding it was good …
